Coquito

Coquito
3 cans coconut milk
3 cans cream of coconut
2 cans sweetened condensed milk
1/2 bottle Bacardi rum
1½ cup water
Cinnamon sticks
Mix all ingredients in the blender except cinnamon sticks. Taste and more rum if you like it stronger. You need to add the water because it will get thicker later in the fridge. Pour into a gallon and refrigerate well. Make ahead for richer flavor. Place 3 cinnamon sticks in gallon for taste.

Challah





Dissolve 2 packages yeast.

In a separate bowl, mix 2 eggs with 1/2 cup raw sugar. Mix in 1/2 cup oil.

Add yeast to egg mixture. Add up to 1 Tbsp. salt to mixture.

Alternate 8 cups flour and 2 cups warm water into mixture.

Knead.

Place in oiled bowl (oil all sides of dough) and cover with a towel - place in warm oven (150 degrees F for 1 minute then turn off) until dough has doubled (approximately 1 1/2 hour).

Punch dough down - let sit for 15 minutes.

Remove a piece of the dough for the "challah" (see note below).

Shape the challah (makes 4 batches) and place on lightly greased cookie sheets, loaf pans, or pie pans.

Let the dough raise a second time in oven (150 degree F for 1 minute and then off) for 45 minutes.

If desired, beaten egg yolks, agave nectar along with sesame or poppy seeds, can be spread on top of the dough before baking.

After second raise, back in oven at 350 degrees F for 20-25 minutes until golden brown on top.

"Challah"


It is traditional to pinch off a piece of dough, the size of an olive, before shaping the dough. This is called "separating the challah." The separated challah is symbolic of the first portion which the Israelites were taxed to give the High Priests. The following blessing is said as the challah is separated: "Blessed art Thou O Lord our G-d, King of the Universe, who hath sanctified us by His Commandment, and hath commanded us to separate challah."

Raw Banana and Strawberry Ice Cream

Ingredients:
4 cups frozen bananas (the riper the better)
5 large Strawberries
1/4 cup cashews
1 teaspoon vanilla
Directions:
Place bananas and strawberries in freezer overnight.
Remove from freezer and place in blender.
Add nuts and vanilla and Blend until ice cream texture.
Serve in beautiful plate and yum yum...enjoy.

Cucumber & Fresh Dill Tea Sandwich

Cucumber & Fresh Dill
Thin bread (your favorite)
Thinly Sliced Cucumber
Fresh Dill
Unsalted Butter & Mayonnaise

1. Lightly butter one side of the bread and spread a small amount of mayonnaise on top of the butter.
2. Top with a thin slice of cucumber and a sprinkling of dill. These may be served open-faced or topped with an additional piece of bread which has been buttered & spread with mayo.

Tomato Avocado Tea Sandwich

Tomato/Avocado
Your Favorite Bread
Sliced Tomato
Mashed, Ripe Avocado

1. Spread mashed avocado onto bread.
2. Place thin slices of tomato on top.
(Try slicing some cherry or grape tomatoes for a nice presentation.)
3. Top with another layer of bread (spread with avocado) or leave open faced if you prefer.
4. Season as needed with salt & pepper.

Hummus


Hummus
Quick (10 minutes), delicious snack. Works well as a party dip – many non-vegan friends and family love this dip! Serve with raw crackers, zucchini slices, celery or carrot sticks. Makes a great party tray along with olives, avocado slices and raw crackers.
Ingredients
2 zuchinni, peeled and chopped
1 cup raw tahini
½ cup fresh lime or lemon juice
⅓ cup cold pressed olive oil
¼ cup chopped olives (optional)
4 cloves garlic, minced
2 teaspoons celtic sea salt
½ tablespoon ground cumin
Preparation
In a high-speed blender, combine all ingredients and blend until thick and smooth.

Strawberries and Cream



Strawberries and Cream
Great for breakfast or a mid-day snack!
Ingredients
4 cups strawberries, sliced
¼ cup almonds
¾ cup cashews
½ pinapple
¼ cup blueberries
Preparation
- Put the almonds and cashews in the food processor
- Add the pinapple in the processor
- Put the mixture on top of sliced strawberries
- Sprinkle blueberries on top

1 pound plum tomatoes, sliced
1 medium yellow onion, sliced
